Head Chef – Trattoria Restaurant Location: Malta Cuisine: Classic and traditional Italian Salary: €40,000 - €45,000 gross per annum Job Summary As the Head Chef, you will lead the operation and management of the kitchen. This is an Italian restaurant offering classic traditional cuisine in a simple and comfortable manner. Responsibilities Responsible for the day-to-day running of the kitchen. Leading a team of 5 chefs Shift and rota management Stock controls, ordering, quality control Management of budget, cost control and margin Recruitment and training of the kitchen team Ensure full compliance with food safety, hygiene and security regulations Personnel Experience of Chef de Cuisine / Head Chef Must have classic Italian Cuisine experience ‘trattoria’ style Current or recent experience in Italy preferred Culinary training / diploma Certification on HACCP standards and other food hygiene rules Passionate about your job Ability to manage costs, negotiate and build relationships with supplierinteractionperience managing, working with and mentoring a young and dynamic team Positive and motivated attitude English speaking You must have a solid understanding of kitchen work practices and regulations; including finance and back office functions.
